Ingredients:
2 tablespoons olive oil
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried thyme
Fresh rosemary sprigs (optional)
Fresh thyme (optional)
Lemon wedges for serving
Instructions
Prepare the Steaks
Remove the ribeye steaks from the refrigerator about 30 minutes before grilling to bring them to room temperature.
Pat the steaks dry with paper towels.
Season the Steaks
In a small bowl, combine the salt, pepper, garlic powder, onion powder, smoked paprika, and dried thyme.
Rub the steaks with olive oil on both sides.
Generously sprinkle the seasoning mix over the steaks, pressing it into the meat.
Preheat your Grill
Preheat your grill to high heat (about 450-500°F).
Grill the Steaks
Place the steaks on the grill and cook for 4-5 minutes on each side for medium-rare, or until the internal temperature reaches your desired doneness:
Rare: 120-125°F
Medium-rare: 130-135°F
Medium: 140-145°F
Medium-well: 150-155°F
Well-done: 160°F and above
For extra flavor, you can add a sprig of fresh rosemary or thyme on top of each steak while grilling.
Rest the Steaks
Remove the steaks from the grill and let them rest on a cutting board for about 5 minutes. This allows the juices to redistribute throughout the meat.
Serve
Serve the grilled ribeye steaks with lemon wedges on the side for a fresh burst of flavor.
