Recipe of the Day: Instant Pot Birria Tacos

Ingredients:
1 Double B Beef Chuck Roast (3.5 Pounds)
Street Corn Tortillas
Kosher Salt
6 New Mexico Chile Pods
5 Guajillo Chile Pods
1 Pasilla Chile Pod
1 Chile De Arbol
Oaxaca Cheese
Olive Oil
1 Tsp Sesame seeds
5 Cups Beef Broth
1 Tsp Oregano
1 Tsp Dried or Fresh Thyme
1 Tsp pepper
1 Tsp Cumin
1 Tbsp Malt Vinegar
Pinch of Ground Cloves
3 Tomatoes
1 Tbsp ginger puree
1 Garlic Head
1 Yellow Onion
4 Bay Leaves
Cilantro
Lime (optional)
Instructions
Prepare the Chuck Roast
Take your chuck roast out of fridge or freezer and allow to thaw
Cube your thawed chuck roast into 2-inch squared cubes
Season generously with kosher salt and set aside
Preparing the Consomé
Open up and take all of the seeds out of all of your chiles
Turn your instant pot on sauté, add a tablespoon of olive oil and sesame seeds, and sear your peppers for 2 minutes. (Stir constantly)
Turn off sauté and add in 3 cups of your beef broth
Add in your oregano, thyme, pepper, cumin, malt vinegar, kosher salt, and a pinch of ground cloves
Dice up your tomatoes and throw them in along with your garlic cloves and ginger paste
Pressure cook for 5 minutes and vent immediately
Pour all of the mixture into a blender, puree it, and pour it back into your instant pot
Pressure Cook
Add your cubed chuck roast to the instant pot along with your bay leaves, and 2 more cups of beef broth
Mix well, seal it, and pressure cook for 50 minutes and let it sit for 20 minutes before venting
Take out your chuck roast and discard your bay leaves
In a separate mixing bowl, add your cooked chuck roast cubes, add a cup of your consomé, and shred your chuck roast
Prepare the Tacos
Dip your corn tortillas in the consomé and place them on a medium-heated griddle
Place some shredded chuck and shredded cheese on the tortilla and once the cheese is melted, fold the tortilla over half of itself
Wait until the tortilla starts to slightly harden and remove from heat
Garnish with onions, chopped cilantro, and lime dip in your consomé and enjoy!
